What Is Guacamole?

Guacamole (nicknamed ‘Guac’) is a type of Mexican avocado dip (or spread) most typically made with mashed avocado, lime juice, cilantro, and salt – often also including onion, jalapeños, and/or tomatoes. It’s so popular that, along with being available in most Mexican and Tex-Mex eateries, you can even buy it pre-made in grocery stores.

And okay, hear us out; we’re not opposed to the occasional grocery-bought pre-packed guacamole. BUT, if you want the most crowd-pleasing, crave-able, moreish results, this easy homemade guacamole recipe is the way to go!

The Ingredients

Prepare this easy guacamole recipe with just 7 ingredients (plus salt and pepper).

Easy Guacamole Recipe (2)
  • Avocado: Use good-quality, ripe Hass avocados for the best guacamole.
  • Onion: Use yellow onion (authentic) or red onion for sharpness and texture.
  • Garlic: While it’s not traditional, we love our homemade guacamole recipe with garlic. Adjust the amount to taste. Use garlic powder in a pinch (to taste).
  • Tomato: (Optional) Use in-season Roma/ plum tomatoes for the best guacamole with tomato. Out of season, use cherry tomatoes or omit them.

Alternatively, use fresh salsa like Pico De Gallo in place of the chopped tomato and onion.

  • Lime juice: Use fresh lime juice for the absolute best flavor (add even more zing with a small amount of lime zest). Lemon juice works in a pinch. This brightens the flavor while also keeping the avocado from browning.
  • Cumin: Adds a warm, earthy depth for a more full-bodied flavor.
  • Cilantro: Use fresh cilantro. If you aren’t a fan, try parsley or green onion.
  • Salt & Black pepper: Use flaky salt (like Maldon) or Kosher salt. Season to taste.

For the most basic 4-ingredient guacamole recipe, use avocado, onion, lime juice, and cilantro (and season with salt).

For the best flavor, leave it to sit and ‘marinate’ for at least 15 minutes.

What Else Could I Add?

  • Jalapeño/Serrano: For spice, add finely chopped chili (de-seeded for milder heat). Otherwise, use hot sauce, crushed red pepper flakes, or cayenne.
  • Vegan Greek yogurt: (or sour cream) Non-dairy Greek yogurt guacamole is even richer and creamier.
  • Paprika: Just a pinch for a little flavor depth.
  • Salsa guacamole: Save time using jarred salsa instead of fresh tomato & onion.
  • Corn guacamole: Use canned or grilled corn.
  • Mango: Fold in some finely chopped fresh mango (adjust the amount to taste) for a delicious, sweet, and savory mango guacamole.
  • Pineapple: Ditto the above.
  • Vegan feta: To mix in or crumble over the vegan guacamole.
  • Toasted pepitas: For crunch. Other nuts/seeds could also work.

FAQs

Can you make guacamole without avocado?

We’d argue that without the avocado, it wouldn’t be guacamole. However, you can make a similar dip using smashed green peas (and just a little avo for richness).

What is the best tomato for guacamole?

Roma tomatoes or other less ‘juicy’ tomatoes are best to avoid watery guacamole. If they’re overly seedy, de-seed them.

How to quickly ripen an avocado?

Pop it/them into a paper bag with an ethylene-producing fruit, like a banana or apple, and this will speed up the ripening. You can also soften an avocado in the oven (at 200F/93C, wrapped in foil) or microwave (in 20-second increments) until soft, though the flavor and texture change slightly when heated.

Can you eat brown guacamole?

The browning results from the avocado oxidizing when in contact with air (like chopped potatoes and apples). If it browns prematurely (within 3-4 days), the homemade guac is still perfectly safe to eat; it just won’t look as appetizing. It may also be slightly more bitter, though.

Recipe Notes

  • To avoid watery guacamole: De-seed the tomatoes if you aren’t eating it immediately.
  • Avocado brown spots: These can leave a bitter taste, so you may want to slice away any brown spots before mashing the avocadoes.
  • For super smooth guacamole: Use a blender/ food processor to process the avocado and lime juice before folding in the remaining ingredients.
  • Timesaving tip: Use a vegetable chopper or mini food processor to ‘chop’ the onion and process the avocado to your desired consistency.
  • Leave the flavors to meld: Even just 20-30 minutes will help to make the best homemade guacamole dip.
  • Adjust the consistency: The homemade guacamole can be as chunky or smooth as you’d like.

How To Tell If an Avocado is Ripe?

  1. Gently squeeze the avocado. There should be some give, but without it feeling mushy and soft.
  2. Check under the stem. If it’s hard to pull off, this usually means an underripe avocado. If it pulls off easily and it is green or slightly browning beneath, the avocado is usually (sometimes it still likes to trick you) ripe. If it’s brown, the avocado will likely have brown spots, too.

Storage Instructions

We recommend adding an extra layer of lime juice to the top to avoid the avocado guacamole browning prematurely.

Then store it with either a layer of plastic wrap (directly touching the avocado) or a thin layer of water/olive oil to keep out the air/oxygen. Store it in the fridge for 2-3 days.

Can You Freeze Guacamole?

Guacamole will freeze fairly well, without the tomato, for up to three months. We freeze it in small portions in a silicone ice cube tray (then transfer it to a Ziplock/Stasher bag).

Leave it to thaw in the fridge overnight or at room temperature for an hour or two.

What To Eat With Guacamole?

There are plenty of ways to enjoy this versatile dip/spread, including:

  • With crudites—cucumber, celery, bell pepper, carrot sticks, etc.
  • With tortilla chips
  • In tacos
  • In or alongside burritos, quesadillas
  • Over vegan nachos
  • With chili
  • In a burrito bowl, salad bowl (like a taco salad)
  • Over a spicy bean burger
  • Dolloped on a baked potato
  • Spread over toast
  • With tofu scramble and other vegan ‘eggy’ dishes

FAQs

What's the easiest way to make guacamole? ›

Mash avocado in a medium serving bowl. Stir in onion, tomato, and garlic. Season with lime juice, salt, and pepper. Cover and chill guacamole for 30 minutes to allow flavors to blend.

What do restaurants put in guacamole to keep it from turning brown? ›

DOES LEMON JUICE KEEP GUACAMOLE FROM TURNING BROWN? Yes! The lemon forms a barrier between the outside air and the guacamole to make sure the dip stays its greenest.

Is lime juice necessary for guacamole? ›

All you really need to make guacamole is ripe avocados and salt. After that, a little lime or lemon juice—a splash of acidity—will help balance the richness of the avocado. If you want, add chopped cilantro, chilis, onion, and/or tomato.

What is the secret to good guacamole? ›

The perfect guacamole should be a cross between creamy and chunky. You'll want a mix of avocado chunks and creamy mashed avocado. My tip is to use a fork to mash the avocado but avoid over-mixing the first time around, this will create too much creaminess and be more like avocado puree rather than guacamole.

What is traditional guacamole made of? ›

Here's all you need for traditional guacamole: ripe avocados, coriander/cilantro, red onions, jalapeño or Serrano chilli, lime and salt. Avoid unnecessary fillers such as sour cream and cream cheese. They only dilute flavour. Popular optional extras include: garlic, tomato, cumin powder.

Why should you leave the lime out of guacamole? ›

You see, lime is a very strong acidic flavor and it can easily overpower the delicate flavor of the avocado.

How much lemon juice to keep guacamole from turning brown? ›

I simply squeezed the juice from half a lemon over the surface of the prepared guacamole. I checked for browning after one hour, one-and-a-half hours, and two hours.

How far ahead can you make guacamole before it turns brown? ›

To keep fresh overnight:

Adding a thin layer of water over top of your bowl of guacamole is a great barrier against oxygen, and since guacamole is heavy, the little liquid that may seep down into the bowl will not water it down. If you use this method, your guacamole should stay fresh for up to 3 days.

Should you put tomatoes in guacamole? ›

Tomatoes – Roma tomatoes are the BEST for homemade guacamole. Make sure to remove all the seeds first. You can also chop up cherry/grape tomatoes. Jalapeño – If you don't like spice at all, you can leave it out!

When should you not eat guacamole? ›

Although brown guacamole isn't the most appealing, it's completely safe to eat (as long as you've stored the guacamole in the refrigerator, and it isn't more than three days old).

What's better in guacamole, lemon or lime? ›

I like the flavor better with lemon juice, but lime works too. If you're out of fresh lemons or limes, try using bottled lime or lemon juice. Although, freshly squeezed juice is definitely the best! Salt: Salt enhances the flavors and brings it all together.

What onion is best for guacamole? ›

Most people prefer to use sweet white onion in their guacamole recipe. Red or yellow onion tends to give the guacamole too strong of a garlic flavor.

Can you put too much lemon juice in guacamole? ›

Typically the recipe is 3 to 4 avocados, 1 to 2 tomatoes, 1/2 onion, 1 to 2 hot peppers, 3 to 4 tablespoons chopped cilantro, 1 to 2 tablespoons lemon or lime juice, 1 garlic clove (optional), and salt and pepper to taste. Adding too much lemon or lime juice can cause a very watery guacamole.

Can you use bottled lime juice instead of fresh limes? ›

Although it seems like a simple swap, you need to be careful when substituting bottled lime juice for fresh. Check the label to be sure it is pure juice; some varieties, such as the popular Rose's label, are sweetened with high fructose corn syrup.

Is guacamole just crushed avocado? ›

Guacamole is traditionally made by mashing peeled, ripe avocados and salt with a molcajete y tejolote (mortar and pestle). Recipes often call for lime juice, cilantro, onions, and jalapeños. Some non-traditional recipes may call for sour cream, tomatoes, basil, or peas.

What is guacamole mix made of? ›

Authentic guacamole doesn't contain fillers and unnecessary ingredients. All you need is avocados, onion, tomatoes, cilantro, jalapeno pepper, lime juice, garlic, and salt. Easy and delicious!

What can I use instead of avocado in guacamole? ›

Broad beans belong to the group of legumes. They mainly contribute carbohydrates, protein and fiber. They are an excellent source of B complex vitamins (B1, B2, B3, B6 and B9), as well as minerals such as iron, calcium, phosphorus and potassium. Broad beans could be a singular way to replace avocado in your guacamole.

What makes guacamole taste good? ›

Fresh lime juice and zest – They make the guacamole zesty and bright. Jalapeño – For heat. Feel free to omit it if you're sensitive to spice. A serrano pepper would work here too!
